My Journey
My name is Tolga, and I am a cook. Not just the chef of this restaurant, but a cook by trade and by heart. It's in my blood.
My father was a cook in Paris before me. As a small child, I didn't play, I cooked. I spent my days by his side, hands in the flour, nose over the pots, learning without even realizing it.
What started as child's play became a vocation, then an all-consuming passion that has never left me.
He taught me that the most beautiful gift you can give someone is a good meal.
My Neighbourhood
I have lived and worked in the Latin Quarter for over twenty years.
I know every street, every face, every habit of this neighbourhood that I love deeply. Its energy, its families, its unique atmosphere, a life that never stops.
When I discovered this place, its century-old stones, its magnificent fresco, that very special light, I knew. This was it.
A restaurant rooted in the Latin Quarter since 1930, a living piece of Parisian history. I couldn't let that pass.
My Cooking
Here, there are no compromises. I stand for authentic, generous French cuisine with no gimmicks.
Fresh, seasonal produce, prepared with the respect it deserves.
Dishes you won't find in other brasseries, because I don't cook to fill a menu, I cook to take you on a journey.
